Preparation method

Boil the kale for about 15 coins in a large pan of boiling water. Add the potatoes, smoked bacon, onions and mustard and let cook over low heat for about 30 minutes. Heat the smoked sausage in the last 10 minutes of the cooking time. Drain the kale and make a stew with the vinegar, butter and a dash of milk. Cut the smoked sausage into slices and serve on the kale.

  • 1 kg kale, finely chopped
  • 1 kg floury potatoes, peeled and quartered
  • 200 g smoked bacon, cubed
  • 2 onions, chopped
  • 2 tbsp sharp French Marne mustard
  • 1 smoked sausage
  • 1 tbsp white wine vinegar
  • 2 tbsp butter
  • milk
