Savory oliebollen with mustard dipping sauce

Preparation method

Savory Oliebollen:

  • Mix the flour and salt in a large bowl. Make a well in the center.
  • Dissolve the yeast in the lukewarm milk and pour this mixture into the well. Let it rest for a few minutes until bubbles form.
  • Beat the eggs and add them to the flour-milk mixture. Mix everything together well into a smooth batter.
  • Add the grated Parmesan cheese and the cooled bacon to the batter. Stir well until everything is evenly distributed.
  • Cover the bowl with a damp cloth and let the batter rise in a warm place until it doubles in size (about 1 hour).
  • Heat the sunflower oil in a deep pan or deep fryer to 180°C.
  • Use two spoons to slide small portions of the batter into the hot oil. Fry the savory oliebollen until golden brown, about 4-5 minutes per side.
  • Let the fried oliebollen drain on kitchen paper.
  • Serve the savory oliebollen warm. You can sprinkle them with extra Parmesan cheese and finely chopped parsley for extra flavor.

Mustard Dipping Sauce:

  • Mix the mayonnaise, Dijon mustard, honey and lemon juice in a bowl.
  • Stir well until all ingredients are well mixed.
  • Taste the dipping sauce and add salt and pepper to taste.
  • Leave the dip in the refrigerator for a while to let the flavors mix well.

Savory Oliebollen:

  • 500 gr flour
  • 10 g salt
  • 10 g dried yeast
  • 300 ml milk, lukewarm
  • 2 eggs
  • 150 gr Parmesan cheese, grated
  • 100 g bacon, fried and cooled
  • Sunflower oil (for frying)

Mustard Dipping Sauce:

  • 4 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tl honey
  • 1 tl lemon juice
  • Salt and pepper to taste
