Preparation method

Cut the watermelon into cubes, put them in a large bowl and add the arugula.

In a separate bowl, mix the honey mustard, lemon juice, grated lemon peel, olive oil, honey, salt and pepper into a dressing.

Divide the dressing over the watermelon and arugula and add the red onion rings. Sprinkle the pumpkin seeds over the salad and garnish with basil leaves.

Serve the salad immediately and enjoy the fresh and surprising flavor combination!

Ingredients

For 4 people:

  • 100 gr arugula
  • 1 mini watermelon
  • 1,5 tsp Marne sweet mustard honey
  • 1 tbsp lemon juice
  • grated zest of ½ lemon
  • 2 tbsp olive oil
  • 1 tl honey
  • salt and pepper to taste
  • 1 red onion in half rings
  • 1 tbsp pumpkin seeds
  • 10 g basil – just the leaves
