Flemish vegan stew

Preparation method

  1. Cut the mushrooms into thin strips or slices. Cut the onions into half rings and the garlic into slices.
  2. Heat the oil in a heavy-bottomed pan. Fry the onions over medium heat until they are translucent and slightly browned. This takes about fifteen minutes.
  3. Then add the mushrooms. This is easiest to do in portions. Let them fry for a while, stir and then put the next portion in the pan.
  4. Finally, add the garlic, salt and pepper to taste. Let the mushrooms fry gently over medium heat until the moisture they release has evaporated. This takes about fifteen minutes.
  5. Then add the Marne Grove Mustard spicy, the apple syrup, the bay leaves and the beer to the pan. Place the sandwich on top. Then let the Flemish stew simmer over low heat for half an hour.
  6. Then taste the stew and season with more Marne Coarse Mustard, apple syrup and/or salt and pepper if you wish.
  7. Serve the vegan Flemish stew with fries and salad.

Ingredients

(for 4 persons)

  • 3 tbsp Marne Grove Mustard spicy
  • 900 gr mixed mushrooms
  • 2 large onions
  • 3 garlic cloves
  • 1 tbsp oil
  • 1⁄2 tsp fine salt
  • black pepper to taste
  • 2 bay leaves
  • 2 tbsp apple syrup
  • 2 bottles of (non-alcoholic) brown beer
  • 1 white sandwich
  • To serve: fries and salad
