Tuna tataki marinated in Groningen mustard-miso-honey dressing

This dish will immediately make you want to travel! This marinated tuna with an oriental twist and a hint of Groningen mustard is refreshingly delicious. Top it off with fries, wasabi mayonnaise and samphire. A beautiful combination that gives you a summer feeling.

Preparation method

Make the marinade for the tuna by mixing the Marne Groninger Mustard, honey, sesame oil, miso paste and garlic. Place the tuna steaks in this. Turn them over and spoon the rest of the marinade on top so that all the flavors can be absorbed. The tuna steaks will be extra tasty if you let them marinate in the refrigerator for an hour (or two).

In the meantime, make the wasabi mayonnaise by mixing the mayonnaise and wasabi together. Make sure that the BBQ/grill/pan is hot so that you can make nice sear marks. When the BBQ/grill/pan is hot, you can get started with the tataki. Briefly fry the tuna (1-2 minutes per side) on the grill and remove the steaks from the grill. Cut the tuna into thin slices.

Serve with fresh fries, wasabi mayonnaise and samphire.

For the tataki & marinade

  • 2 fresh tuna steaks
  • 2 tbsp Marne Groninger Mustard
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp miso paste
  • 1 garlic clove, crushed

for it

  • 2 tbsp mayonnaise
  • 1 tsp wasabi
  • 2 portions of fresh fries
  • 2 handfuls of fresh samphire
