Spinach tart

Preparation method

Preheat the oven to 200ºC. Grease the molds or springform pan with butter and cover with the puff pastry. Poke holes in the dough and sprinkle the base with a little flour (this keeps the base firm). Mix the cream cheese, grated cheese, eggs, mustard and cream thoroughly in a food processor or with a hand blender. Place the spinach in the molds and pour the egg mixture over it. Sprinkle with pine nuts. Bake the tarts for 10 minutes in a preheated oven. Reduce the temperature to 150ºC and bake for about 30 minutes.

  •  Butter for greasing
  • 7 puff pastry sheets
  • wheat flour
  • 400 gr cream cheese
  • 200 g old cheese, grated
  • 3 eggs
  • 2 tbsp Marne Dijon mustard
  • 4 tbsp cooking cream
  • 1 kg spinach, blanched and well drained
  • 2 tbsp pine nuts, roasted in a dry frying pan
  • Single baking tins or 26 cm springform pan
