Scones with cheddar and mustard

These cheddar and mustard scones would make a very delicious addition to any summer picnic or high tea. Scones are always best eaten on the day they are baked, but if necessary they can be kept in a sealed container for a day. This simple recipe for savory scones is a great and easy bake. The cheese scones are the perfect snack for every cheese lover. Not only are they light and fluffy, as any good scone should be, but they are also extremely cheesy!

Preparation method

Preheat the oven to 220°C. Place a sheet of baking paper on the baking tray. Place the flour, baking powder, garlic powder and salt in a large bowl and mix in the cold knobs of butter. Use your fingertips to form a breadcrumb dough. Now mix in the grated cheese. Make a well in the center and add the egg, mustard and Greek yogurt. Mix with a spatula to form a crumbly dough. Remove the dough from the bowl and place it on a floured surface. Form a ball with your hands, but don't knead! Roll out the dough to about 1,5 cm thick.

Cut out the scones with a 6,5 cm cutter and place them on the baking tray. Gently bring the remains together and then cut out as many circles as possible until there is no more dough.
Brush the tops with milk and bake in the hot oven for 13-15 minutes or until golden brown, well risen and a skewer comes out clean.

Cut or break the scones in half and spread them on both sides with the herb butter/wild garlic butter and enjoy.
