Salad with smoked chicken fillet and honey-mustard dressing
Preparation method
For the dressing, mix the egg yolk, vinegar, honey and stock together with a hand blender. Slowly add the oil until you have a nice thick dressing. Stir in the coarse mustard. Taste and add extra honey or mustard if necessary. Place the lettuce on 4 plates and divide the chicken fillet, tomato, cucumbers and red onion over it. Drizzle with the dressing.
Ingredients
- 100 gr mixed lettuce
- 200 g smoked chicken fillet, cut into strips
- 100 g cherry tomatoes, cut into halves
- 1/2 cucumber, sliced
- 1 red onion, cut in half rings
For the honey-mustard dressing:
- 1 egg yolk
- 1 tsp white wine vinegar
- 1 tl honey
- 200 ml vegetable stock
- 5 el extra virgin olive oil
- 1 tbsp coarse mustard
