Arugula stew with aged cheese

Preparation method

Boil the potatoes until done, drain them and mash them together with the arugula into a coarse stew. Stir in the mustard and cheese and season with salt and pepper (add a dash of olive oil if the stew is too dry).

  • 1 kg floury potatoes, peeled and cut into pieces
  • 75 g arugula, chopped
  • 1 tbsp sharp mustard
  • 200 g old cheese, in cubes
  • Salt and pepper
  • Olive oil
