Savory muffins with spring onion, Groningen Mustard and cheese

Preparation method

Preheat the oven to 200 degrees. Place a paper muffin tin in each muffin compartment. Mix the flour, baking powder and salt and pepper together. In another bowl, mix the eggs, buttermilk and sunflower oil together. Pour the wet ingredients into the dry and mix well until you just barely see any dry flour. Do not mix for too long, so the muffins remain extra airy. Then mix the mustard, old cheese and spring onion into the batter. The mustard may still be visible in streaks. Fill each muffin tin with the batter almost to the top and bake in the oven for 20-30 minutes until golden brown and done. Mix the crème fraîche and the second tablespoon of Groninger Mustard together to make a nice spicy cream to spread on the muffins when they have cooled.

  • 300 gr flour
  • 4 tl baking powder
  • 1 / 2 tsp salt
  • Pinch of pepper
  • 2 eggs (m)
  • 200 ml buttermilk
  • 125 ml sunflower oil
  • 1 tbsp Marne Groninger Mustard
  • 150 g old cheese, in small pieces
  • 2 stalks of spring onion, cut into rings
  • muffin tin 12 compartments, 12 paper muffin tins

For the crème fraîche layer (optional)

  • 4 tbsp crème fraîche
  • 1 tbsp Marne Groninger Mustard
