Puff pastry Christmas tree with Limburg mustard

Preparation method

1. Take the puff pastry out of the refrigerator.

2. Preheat the oven to 200C, top and bottom heat.

3. Place the puff pastry on a baking tray with a sheet of baking paper in between. Spread the entire surface of the dough with Limburg mustard. Sprinkle the cheese over the mustard, followed by cranberries and chopped rosemary.

4. Roll out the second piece of puff pastry over the filling. Determine the center of the short side of the dough. Make two long diagonal cuts downwards from the center. Cut out a stem at the bottom of the triangle. You can form another Christmas tree from the remaining pieces of filled dough. Then stick the long sides of the triangle together and press the dough well.

5. Then make horizontal cuts about 1,5 cm apart. Cut from the sloping sides of the tree toward the center. Make sure you leave a strip of dough intact in the middle, which will hold the tree together.

6. Grab the ends of each loose strip and twist it once or twice so that you can now see the filling nicely.

7. Beat the egg yolk with a tablespoon of cream and brush this mixture over the visible pieces of puff pastry.

8. Bake the Christmas tree in the oven for 20 to 25 minutes until golden brown.

• 2 rolls of fresh puff pastry
• 1 jar of Marne Limburg mustard
• 175 grams of grated old cheese
• 4 sprigs of rosemary
• 1 handful of dried cranberries
• 1 egg yolk
• 1 tbsp cream/whole milk
