Preparation method

  1. Preheat the oven to 200 degrees and let the puff pastry slices thaw.
  2. In the meantime, make the roux. Melt the butter in a saucepan and then add the flour. Stir this thoroughly with a whisk for about 2-3 minutes. Make sure it doesn't burn! Then add the milk little by little until it is a thick mass. Turn off the heat.
  3. Then fold in the cheese, the mustard and the smoked sausage pieces. Taste and season with salt, pepper and possibly some more mustard. Let cool slightly.
  4. Cut the puff pastry slices in half so that you get 12 slices. Place a tablespoon of the mustard mixture on half of 1 slice (leave the edges free). Fold the other half over and press the edges closed with the back of a fork. Repeat this for all slices. Place them on a baking tray lined with baking paper
  5. Beat the egg in a small bowl. Brush the puff pastry bites with a little egg and sprinkle with some more cheese.
  6. Bake them in the oven for about 20 minutes until golden brown!
