Difference between Groningen and Limburg mustard

You probably have a jar in your kitchen cupboard, but chances are you don't know exactly what type of mustard it actually is. Let alone knowing the specific difference between all those different types. That is why we are happy to help you get started and tell you all about the difference between Groningen and Limburg mustard. Of course, we will also explain to you when to use which type.

Groningen mustard

When making Groningen mustard, the mustard seeds are only coarsely ground. This ensures that you can partly taste the seeds in the mustard. This not only gives a characteristic texture but also a spicy and sharp taste. The coarse seeds make the mustard look inviting. The recipe for Groningen mustard is unique and may only be made by Marne mustard. It is the most popular mustard in Marne. The recipe has been around for over 128 years. Of course, the recipe has been further developed over the years, but the basics are still the same after all these years. Samples? The mustard tastes very delicious with red meat, fish and cheese.

Limburg mustard

Limburg mustard is also made exclusively by Marne and has a milder taste. This is because the mustard seeds are not ground, but soaked in natural vinegar. This ensures that the Limburg mustard contains whole mustard seeds. When you take a bite of the mustard, the seeds may explode in your mouth, creating a sharp taste sensation. Nevertheless, the taste of the product can be described as mild, precisely because the seeds are not ground. Because the mustard contains whole mustard seeds, Limburg mustard is very suitable for use in sauces or dressings.

The difference between Groningen and Limburg mustard

Both Groningen and Limburg mustard may only be made in the Marne Mosterd factory. This is striking because the mustard factory is located in Groningen and not Limburg. The name of the mustard therefore does not refer to the origin of the product. The name does refer to the origin of the original recipe.

Limburg mustard originally comes from Limburg. From Gulpen to be precise. The Marne mustard factory bought the original recipe when the people of Gulpen wanted to focus on the famous beer brewery. That probably explains why a good glass of beer tastes so good with snacks with mustard.

In addition to the origin of the recipe, Groningen and Limburg mustard also differ in preparation method. The big difference between them is that the mustard seeds of the Groningen are ground and the mustard seeds of the Limburg are not. Limburg mustard does not contain ground mustard seeds, but is unique in its kind because the mustard seeds are soaked in natural vinegar.
